Read-a-Thon

Alright read-a-thon-ers, how’ve you been doing so far today? Good? Excellent.

We don’t know about you, but it’s been a little while since dinner here on the east coast. And some of us hardcore things haven’t even had dinner. Either way, we think that all of us could use a little nomnomnom.

For this mini-challenge, we’re going to keep our bellies happy for the long haul. So go on . . . stand up, head into the kitchen, and rustle up something delicious. Then come back and tell us what you put down your hatch.

Did you bake something delicious in advance? Were there quick and easy leftovers? Something simple, like cheese and crackers? Something out of the ordinary, like kale chips? What do you usually pack in your bag when you need to keep yourself going over a long period of time? Hungry fancy ladies want to know!

    I’ve had all kinds of snacks all day long – way too much, actually. But now Hubby’s home so I had a prepared-ahead casserole ready to go in the oven. It’s certainly not gourmet, but it’s tasting pretty good about now.

    Wow, this just came at the right time. I just took enchilada casserole out the oven and I am about to dive right into it. I also just got out red rain downpour energy drink. It is Glorious!

    This is a normal thing for me but might be out of the ordinary for others:
    Roast Garlic & Artichoke Hummus & Toasted Ritz (would’ve been pita chips but I couldn’t find any!). I wanted to make something in advance but I didn’t have time!

    I took a break to support my sis at a craft show and then we went out to dinner to celebrate, so my dinner was at an Asian Bistro near my house!

    I had some turkey jerky earlier. Now I’m munching on some dehydrated kale that my hubby made (he also went and got me a Starbucks shaken black tea). Yeah, he rocks. That all sounds great and healthy. It’s only 9pm here in Central Texas. I have chocolate at the ready. And… other bad stuff. LOL

    I ate some popcorn! Easy to munch on while reading! And some strawberry cake balls covered in white chocolate that i made. Sweet and salty! lol it was perfect!

        I also have some belgian chocolate with toasted hazlenut and himilayan salt on standby! lol Its the BEST chocoalte ever!!! I seem to have this…sweet and salty theme going on! lol Thats why this chocoalte is PERFECT! It already has the salt added in! lol I swear a woman must’ve invented it! And whoever she is, she deserves the nobel peace prize! lol

    Actually…. I left the house, put the readathon on pause and had dinner with my hubby and friends at a cool restaurant where you cook your own steak.

    Back now after steak, potato, and salad… ready to roll into the evening :)

    I made lasagna from scratch (not today) and froze it so the Huz and I could have it for dinner tonight. I just ate a piece and it was delicious! I’ve been snacking on banana chips too.

    I actually just got back from dinner with my boyfriend and his dad and dad’s girlfriend. I had Thai Red Snapper–Red Snapper in a green curry sauce with artichokes, potatoes, asparagus, pineapple, cherry tomatoes, and carrots over jasmine rice. Delicious!

    I did some cooking in advance, but the mini-quiches and caramel popcorn I made as I went along. Hubs made the pizza (and a run to Starbucks for my Salted Caramel Mocha) and there’s nuts and Halloween candy to devour!

    OHHHH, :D we just had dinner here. It was pretty late (8pm) but very, very good. We had homemade Meatloaf (yummy) with boiled potatoes and green beans. Followed up with a glass of Ginger Ale to wash it all down. :D I just love Meatloaf, and it is a feel good meal that is easy to make and complete.

    Well, I picked up a rotisserie chicken from walmart for dinner and since it’s just me here at the house I have been snacking on it all evening and probably will continue to do that into the night.

    For supper, I had an entire veggie plate with ranch and I’m finishing a can of vanilla coke right now. :)

    I haven’t been that hungry today. All I had earlier was some spaghetti for lunch and a caramel apple w/ nuts for a snack.

    I still have another caramel apple and some white cheddar rice cakes in case I get the munchies later tonight, not to mention about 12 cans of vanilla coke. :)

    Well–dinner here on the west coast was not that long ago! We had take out Chinese food that my lovely husband brought home! It was delicious. Later I have some chocolate or some chips and dip or popcorn or Crispix mix–whatever strikes my fancy.

    I just had some rainbow sherbet topped with chocolate chips and toffee chips. For breakfast I had a banana oatmeal chocolate chip and cranberry muffin that I baked earlier in the week. I had a turkey/swiss sandwich for lunch and for dinner we had mac and cheese smothered in leftover chili that I made earlier in the week. My tummy has had a happy day!

    I made peanut butter and chocolate chip pumpkin muffins this morning. I noshed all afternoon on some kettle corn with white cheddar popcorn seasoning, chips and guac, and I do plan on busting out a four layer bean dip later once I get around to making it. I will probably hit the sweets once we hit 2 am haha.

    I opted out of dinner and just snacked instead (although now, of course, I’m hungry). I’ve been eating grapes, string cheese, and an apple with caramel sauce. Actually pretty healthy! But you can bet that if there were Doritos in my house, those would have been the first to go.

    My sister made homemade perogies. They were surprisingly good, though when she was making them she was very… unbearable to be around. She’s like that.

    I made crappy oatmeal, crappy because it was made with lactose-free 2% milk and water. I usually make it with regular 1% milk. I mean, it wasn’t horrible since I added frozen blueberries (that I unfroze in the microwave) and brown sugar, but it wasn’t what I was used to.

    We have had a variety of delicious snacks all day. Anthony’s dad brought us homemade sausage rolls and pumpkin muffins. We also started the day with doughnuts and hot chocolate! Throughout the afternoon we kept the popcorn popping and had plenty of cold beverages (Coke, Sprite, Dr. Pepper). Samantha’s mom brought fruit loops, and we had some cupcakes, and mixed nuts left over from the ladies book club. Pizza was just ordered for our midnight snack ….

    We aren’t going hungry, that’s for sure!

    Okay, mine is going to be SO boring because I’m on a low carb diet so I’m limited on what I can eat. What I’m having is chicken salad on pork rinds (no bread or crackers allowed) and sugar free, low carb yogurt. There’s a Slim Jim for a snack later. I also have trail mix (without chocolate :( ), but it does have almonds, cashews, and peanuts…and I’m allowed a few raisins. You’re probably wondering why I didn’t make the RAT a cheat day. Well, last Saturday was my birthday and I majorly cheated so no more cheat days until Thanksgiving! :)

    I made brownies yesterday so they’d be nice and dense today, but the stars of my diet have been Pumpkin Eggos. Mmm… Pumpkin-flavored everything season! I’m following my last round of waffles with a Guinness. I hope it won’t make me sleepy.

    After taking a 7 hr break from the readathon (much longer than I anticipated) I just came home and make a turkey and cheese sandwich and ha sour cream and onion potato chips. So boring, but it’s too late to cook (11pm) and I already missed too many valuable hours of reading. But I wish I had some spaghetti.

    Little mini candy bars provide just the right amount of sugar to keep me motivated. I wish I had time to bake some yummy muffins, but that was not to be. Thank goodness Halloween is around the corner and mini candy bars come by the boxful!

    Since I’m trying to not overeat today, I’ve been drinking water, unsweetened iced tea, and diet sodas and trying not to give into the temptation to snack. I did, however, help myself to a left-over scone at mid-afternoon. I’ll probably have another one around midnight. My meals, however, have been special. Hubby treated me to meals at my favorite local restaurants and I’ve eaten very well today. Since the Read-a-Thon ends at 7am in my time zone, he’s agreed to take me out for a celebration breakfast & then I’ll nap for a couple of hours.
